
Coconut chia pudding with apricot and passion fruit compote

Chia seeds are widely known. However, not everyone knows that they were already considered a staple food by the ancient Aztecs and Mayans. In fact, "chia" is an ancient Mayan word for "power." They contain plenty of omega-3 fatty acids, fibers, proteins, essential minerals, and antioxidants.
Chia pudding is jelly-like and sweet. You can make it using your favorite plant-based milk (together with your chosen Superfood powder) and add fresh fruits, jam, or granola as a topping.

Preparation time: 20 min
Cooling time: overnight
INGREDIENTS
Pudding:
4 tbsp Chia seeds
2 tbsp grated unsweetened coconut
300 ml coconut milk
1 tsp vanilla extract
2 tsp maple syrup
Compote:
1 Passion fruit
2 apricots (ripe)
1 tbsp coconut sugar
1 tsp EVAH Elixir | Bahama Mama
Topping: coconut flakes, almonds
INSTRUCTIONS
Pudding:
Mix the ingredients together in a glass or jar. Let it sit for 10 minutes and stir every 2-3 minutes (to avoid lumps). Then let it cool in the refrigerator overnight. The longer it sets, the more time the seeds have to expand and achieve the right texture.
Compote:
Cut the apricots into small pieces and put them in a pot with the passion fruit pulp and sugar. Heat the fruits over medium heat, stirring often, until the sugar dissolves and the result is a thick jam-like consistency. Add a little water if the compote is too thick. Let it cool for 10 minutes, then add EVAH Elixir | Bahama Mama and stir until the powder has dissolved. Store in the refrigerator.
Serving:
Place the compote on top of the coconut pudding and garnish with crunchy almonds and coconut flakes for a perfect breakfast or snack.
