COCOA chocolate is made by cold pressing unroasted cocoa beans in a process lasting over 60 hours, where the beans are ground at low temperatures (45 ºC). This method preserves the live enzymes in the cocoa and removes the fat (cocoa butter). It also ensures the optimal preservation of all the valuable antioxidants and polyphenols in the cocoa.
