
Coconut-Chia pudding with apricot and passion fruit compote

Chia seeds are widely known. However, not everyone knows that they were considered a staple food of the ancient Aztecs and Mayans. In fact, "chia" is an ancient Mayan word for "strength." They are rich in omega-3 fatty acids, fiber, protein, essential minerals and antioxidants.
Chia pudding is jelly-like and sweet. You can make it using your favorite plant-based milk (along with your choice of Superfood powder) and adding fresh fruit, jam, or granola as a topping.

INGREDIENTS
Pudding:
4 tablespoons Chia seeds
2 tablespoons grated unsweetened coconut
300 ml coconut milk
1 teaspoon vanilla extract
2 teaspoons maple syrup
Compote:
1 Passion fruit
2 apricots (ripe)
1 tablespoon coconut sugar
1 tsp EVAH Elixir | Bahama Mama
Topping: coconut flakes, almonds
GUIDE
Pudding:
Mix the ingredients together in a glass or jar. Let stand for 10 minutes, stirring every 2-3 minutes (to avoid lumps). Then let it cool in the refrigerator overnight. The longer it is allowed to solidify, the more time the seeds have to expand and reach the right consistency.
Compote:
Cut the apricots into small pieces and place them in a saucepan with the passion fruit pulp and sugar. Heat the fruit over medium heat, stirring frequently, until the sugar has dissolved and the result is a thick jam-like consistency. Add a little water if the compote is too thick. Let cool for 10 minutes and then add the EVAH Elixir | Bahama Mama and stir until the powder has dissolved. Store in the refrigerator.
Serving:
Place the compote on top of the coconut pudding and garnish it with crunchy almonds and coconut flakes for the perfect breakfast or snack.
